Eat  for health and enjoyment

​I eat for health and enjoyment. Eating for health means not just avoiding the bad stuff but also eating nutrient rich food prepared in a way that gives your body the best access to the nutrients in the food.
 
When deciding on a meal I consider what I have an appetite or craving for. Then I attempt to come up with a recipe that will satisfy my craving and give appropriate nourishment to my body. In choosing what to eat I make some compromise considering my craving and what is optimal for health. I have to be careful not to compromise so much that I can’t meet my goals for health and longevity.
 
I generally keep only healthy food in my house. By that I mean whole food and mostly plants and only food raised with organic methods. Keeping only healthy food available helps ensure that I won’t satisfy a craving with something quick and easy but unhealthy.
 
As an example I will tell you what I ate yesterday.
 
Breakfast was a smoothie/pudding. Before breakfast I had coffee. I have coffee every morning.  I wanted blueberries in the smoothie but I ran out so I used raisins instead.
Ingredients: avocado, raisons, dates, pumpkin seeds, fresh ginger, vanilla, coco powder and rejuvelac. This does taste better with blueberries.
 
Lunch:
Eating a big salad full of nutrient dense vegetables would have been a better choice. It is of great benefit to eat some raw fresh food every day. Anyway I was tired, it was raining and most of my salad vegetables were in the greenhouse and garden. Not good excuses but I’m not perfect. Hopefully that confession will remind me to make a better choice today.
 
So what I did eat was healthy but it just took the place of something better. It was kimchi fried rice. Since I was short on time and tired I used what was left over in the refrigerator. This is a quick and easy meal when the grain is already cooked.
Ingredients: tofu, kimchi, and rice sautéed in a little peanut oil. There was little rice so I also added a little left over buckwheat and whole wheat noodles.
 
It was good, satisfying and nourishing. Kimchi is best eaten raw to get the full benefit of the probiotics. I cooked the kimchi just enough to make it warm. I believe I didn’t kill to many of the little bacteria.  
 
Supper:
Even more tired at this point. Had a day with a lot of manual labor. I was too tired to cook but my choice was a healthy and nourishing meal that satisfied me.
 
Ingredients: Left over garbanzo beans, avocado, and commercially prepared organic salsa mashed up to make a dip. I used some purchased corn chips to dip with. Wine to drink. I don’t consider wine a health food but a little bit is ok.
