Split Green Pea Soup
Onion, 1 small
Garlic, 3 cloves
Carrot, 1 large
Split green peas, 1 cup (8 oz)
Water, 2.5 cups (or vegetable broth)
Soy sauce 1/8 cup
Bay leaf, 1
Rosemary 1 Tablespoon
Sage, 1 Tablespoon
Cracked black pepper, 1/2 teaspoon
Chop the onions, garlic and carrot, then saute in the Instant Pot.
Add the peas and liquid including the soy sauce.
Add the herbs.
Pressure cook on high for 10 minutes.
Release pressure. Mash some of the peas with a potato masher or blend some of them.
Ladle into bowls and sprinkle some of the pepper and almonds on top. A few chopped raw onions is good too, red, white, or green.
The directions for stove top are about the same. Just simmer until the peas are soft, about 20 minutes.
