Sweet Potato with Date/Nut Sauce
Sweet potato, 1 medium (700 g)
Dates, 7 large (90 g)
Cashews, 1/2 cup
Water, 1/2 cup
Ginger, 2 teaspoons (5 g)
Turmeric, fresh, 1 teaspoon (2 g)
Black pepper, freshly ground
Cayenne powder, 1/4 teaspoon
Maple syrup to taste if desired.
Steam the sweet potato or cook it any other way you choose.
Add the next ingredients to a blender and blend until smooth.
Poor the blended sauce over the sweet potato and add maple syrup to taste.
I sliced the potato into 1/2" rounds and baked it at 450 degrees for 30 minutes. Lay everything in a single layer.
- Bake sliced apples with the sweet potato.
- Use 1/4 cup of raisins instead of dates.
